Raw rice or boiled ( ଅରୁଆ କିମ୍ବା ଉଷୁନା ଚାଉଳ ) -250gm
Palm Fruit ( ତାଳ ) – 4 piece
Salt ( ଲୁଣ )– as per taste ( ଲୁଣ ଆବଶ୍ୟକ ଅନୁସାରେ )
Water as required - ( ପାଣି ଆବଶ୍ୟକ ଅନୁସାରେ )
refined oil or ghee ( ରିଫାଇନ୍ ତେଲ କିମ୍ବା ଘିଅ )
suger ( ଚିନି )
HowToMake: How to prepare ( ପ୍ରସ୍ତୁତ ପ୍ରଣାଳୀ ) :
Soak the raw rice for at least 2 -3 hours, wash the soaked rice properly. Drain all water and spread on a big size plate or any clean white cloth to dry under the sunlight or under a fan for half an hour or 45 minutes. Put in a grinder and grind into a fine powder. Now take the top portion off of the palm fruit. Peel open the ripened fibrous layer. Separate the kernels, there will be around 2-3 of them.Pour water on a kernel and squash it well so that the juice comes out and collects on a bowl. You can use water if required. Take one more bowl add 2 cups of water, atop rice powder, flour and palm fruit sap. Now mix the grinded rice and palm fruit sap together into a batter. Combine the rice powder and palm fruit sap together in a bowl . Add salt to the batter and mix well. Now cover the batter and keep aside to 10 -15 minute.The batter should be of dropping consistency. Taste for sweetness you can add suger if needed. This batter you can prepare idli, dosa. Otherwise, you take a lump in your hand and slowly drop it in the oil to make a ball.
